How Chopped Mixed Achar / Pickles are prepared?

Each ingredient is carefully chopped and mixed with a blend of seven aromatic herbs and spices, then preserved to perfection in rich mustard oil for it to preserve in natural ways.

Pickling Process:

  1. Ingredient Preparation: Fresh produce mangoes, lemons, carrots, and green chilies carefully washed, dried and then finely chopped.
  2. Spice Mixture: Spices and herbs are first sundried and cleaned. A blend of these including Fenugreek seeds, Funnel seed, Mustard seeds, Nigella seeds, Turmeric, Red chili powder, and Salt, is prepared.
  3. Grinding and Mixing: Some herbs and spices are roughly ground. The chopped produce is mixed with the spice blend in precise ratios.
  4. Mustard Oil Immersion: The mixture is then fully immersed in mustard oil, ensuring complete coverage to prevent spoilage and enhance the flavor profile.

Caution

  • To ensure the longevity and quality of your achar / pickles, always use dry hands and spoons when taking them out of the container. 
  • Additionally, make sure the top layer of the pickled ingredients is always covered with oil to prevent spoilage.

:اچار بنانے کا طریقہ

                                                                               اجزاء کی تیاری: تازہ  کیری، لیموں، گاجر، اور ہری مرچ کو احتیاط سے دھوکر خشک کیا جاتا ہے اور پھر باریکی سے کاٹا جاتا ہے۔

مصالحہ مکسچر: مصالحے اور جڑی بوٹیاں دھوپ میں خشک اور صاف کی جاتی ہیں.۔پھرایک مکسچر بنایا جاتا ہے جس میں میتھی دانہ، سونف، رائی دانہ، کلونجی، ہلدی، لال مرچ پاؤڈر، اور نمک شامل ہوتے ہیں۔

مکسنگ: کچھ جڑی بوٹیاں اور مصالحے  پیسے جاتے ہیں۔ کٹے ہوئے اجزاء کو مصالحہ مکسچر کے ساتھ ملا کر مخصوص تناسب میں مکس کیا جاتا ہے

سرسوں کے تیل میں :  پورےمخلوط کو سرسوں کے تیل میں ڈوبایا جاتا ہے، پورےاجزاء کو محفوظ کرنے اور روایتی ذائقہ کو برقرار رکھنےکے لئے
